Q:  Please tell me how to bake or cook with Cal-0-Sweet.  I would like to use the product for something other than adding it to tea and coffee.

A:  Cal-0-Sweet can be used in all forms of cooking.  As long as the recipe has sufficient moisture, you can safely follow the recipe, just as you would use sugar and at the same use level.  This would be for recipes such as, flan, cheese cake, apple pie, puddings, ice cream, whip cream, etc.

If the recipe is "dryer", like a cake or crunchy cookies or brownies, then, due to the high fiber content of the Cal-0-Sweet, it will absorb too much of the liquid and tend to dry out, within hours or by the next day.  Therefore, you will have to either add additional liquid or oil, whatever the recipe calls for.  Of course, we recommend always testing a small version of your recipe, before attempting a full size batch. Then, you will be able to determine just the right amount or liquid or oil that will offset the drying action of Cal-0-Sweet's high fiber content.

If you are able to determine a solution and/or modification, that works consistently with any particular recipe, please share your findings with us.  We know that our other Cal-0-Sweet bakers would love to hear from you!

Erythritol - Naturally derived from Cane Sugar

An all-natural, no-calorie refined sugar alternative. It looks like sugar, feels like sugar, bakes and tastes like sugar and it's made from sugar. Erythritol is only 70% as sweet as refined sugar.

Erythritol naturally occurs in many fruits and fermented foods and wines. It's made by mixing sugar with water and fermenting it with a natural culture, the same way yogurt/cheese from milk, wine from grapes and soy sauce from soy beans is produced. While its name may seem terribly scientific, erythritol is found in nature at low levels in grapes, melons and pears and can be found at higher levels in fermented products like wine. Each day, it is estimated that we consume somewhere between 30 and 100 mg of naturally occurring erythritol in our regular diets.

It's safe for all types of diabetics, doesn't effect insulin levels, helps prevent tooth decay, supports the immune system and it's heat stable for use in cooking.

Technically classified as a sugar alcohol, it has a zero glycemic index because it does not have an effect on blood sugar levels. Erythritol does not cause undesired gastrointestinal effects when consumed in reasonable quantities. Compared to the other sweeteners classified as sugar alcohols, erythritol has the highest digestive tolerance.

Since the late 1980’s, erythritol has been used as an ingredient in foods and beverages in Japan, and was more recently approved for use in the U.S. and Canada. The EU Commission directive 2008/100/EC - posted in Europe's official journal on 28 October – now establishes that the energy conversion value of erythritol is zero calories. These approvals were based on extensive scientific studies reviewed by an expert panel of independent doctors and scientists.

Xylitol – Natural Birch Tree Sugar

A five-carbon sugar that has a number of unique properties. in addition to being a low calorie sugar substitute (40% fewer calories than an equivalent amount of table sugar [sucrose]), Xylitol does not cause significant changes in blood glucose or insulin, making it not only safe for diabetics and those trying to lose weight, but also a desirable sweetener for those who understand the importance of maintaining low levels of glucose and insulin, as an anti-aging regimen.

Among its other known benefits to health, regular Xylitol consumption results in fewer cavities, improved periodontal (gum) health, and reduction in nasal, sinus and oropharyngeal infections. Xylitol also is effective against H. pylori, the microorganism implicated in periodontal disease, bad breath, gastric and duodenal ulcers, and even stomach cancer. It now appears that another highly significant effect can be attributed to Xylitol.

In studies in Finland in 1994, Xylitol was shown to be able to maintain bone density in rats which had their ovaries surgically removed. Without ovaries, estrogen levels in these rats plummeted — and so did the bone density in the rats which were not given Xylitol. However, in ovariectomized rats which had been given Xylitol, bone density actually increased. Therefore, Xylitol is believed to be extremely beneficial in treating humans for the prevention of bone loss and/or osteoporosis.

Stevia Sweetener System

Stevia is 100% natural and is derived from the leaf of a plant. It has zero calories and provides many healthful benefits. On December of 2008 the FDA declared stevia as safe for use in foods and beverages. The FDA approved stevia at a minimum of 95% Rebaudioside A (Reb A), which is the sweetest compound of the plant. There are seven compounds of the stevia plant. Reb A is the sweetest and purest part of the plant and is the least bitter of the other compounds therein.
